Preparation

First you prepare the meat. This must be cut very, very thin - the thinner the better. Tip: If you buy your meat from a butcher, he may be able to cut it for you. Just ask for it!

Now cut the vegetables into bite-sized pieces.

Then you can already put the prepared dashi in a pot and let it get hot - best of all right at the table!

Now it's time to start cooking: Start with the harder vegetables and then add tofu and softer vegetables to the broth.

The meat is cooked fastest - you only have to move it in the broth for three to six seconds!

Now the prepared meat and vegetables and the tofu are ready to eat and can be dipped in Ponzu or sesame sauce.

Finally, put the udon noodles in the pot.

Let them get hot for 1-2 minutes - and then you can take them out and eat them with the sauce of your choice!
