Preparation

  1. Start preparing the dashi broth if it is not already prepared.

  2. Now cut the onion in 10-12 columns.

  3. Peel the carrot, cut it in two lengthways and then cut the halves roughly into triangular pieces.

  4. Now you peel the potatoes and cut them into slices as well.

  5. Halve the beef slices.

  6. Now cook the shirataki noodles briefly and then wash them down to get rid of the fishy taste.

  7. Heat oil in a pan and add the onions. Turn them over until they are covered with oil all around.

  8. Now add the meat. Fry it until it is well-done and no longer pink.

  9. Now add potatoes, carrots and shiratake noodles first and then dashi, mirin, soy sauce, sugar and sake to the meat and onions.

  10. When the broth boils, turn the heat down a little. Make sure that all ingredients are covered with liquid.

  11. If foam forms on the surface, skim it off with a sieve.

  12. Leave the stew to simmer until the vegetables are well-done - this takes about 15 minutes. Do not stir the ingredients!

  13. If you have some time, you can let the stew cool down a bit and warm it up again before serving. This way, the aromas will develop even stronger. Enjoy your meal!
