Preparation

First you wash the chicken and then cut it into bite-sized pieces.

In the next cut, you also cut the onions into crescent-shaped rings.

Now you beat the eggs in a small bowl and whisk them thoroughly.

Then you can already start with the actual cooking process. For this, mix mirin, sugar, soy sauce, sake, water, dashi and the onions and pour the mixture into a pan.

Let the mixture simmer for 3-5 minutes at medium heat.

Now add the chicken meat and let it cook for another 5 minutes. You may be able to turn the temperature down a little more.

Then pour the beaten eggs slowly and evenly over the mixture and reduce the heat a little more. Let the eggs fry until they are as firm as you like them.

Now it's time to serve: Put the cooked rice in a bowl, pour the chicken and egg mixture over it and garnish with spring onions. Enjoy your meal!
