A close-up pile of fresh ginger rhizomes fills the whole frame. The knobby roots are stacked tightly together, each with the typical gnarled shape of thick fingers branching off a main body. Their skin is a warm tan to light brown, papery in spots with fine rings around the joints, and a few cut ends reveal the paler, firmer flesh underneath. Some pieces look smooth and plump, others rougher and slightly scuffed, the way ginger looks in a market bin or grocery produce section. This is shouga, the Japanese name for ginger.

A knobby fresh ginger rhizome lies on a wooden cutting board, its tan, papery skin showing the characteristic branched fingers of the root. To the left, a small stack of thin round slices has been cut from it, revealing the pale yellow, fibrous flesh inside. The warm wood grain of the board fills the background, giving the shot a simple kitchen-prep feel. Ginger, called shouga in Japanese, is shown here both whole and sliced.

    Shouga/

Shouga?

    Shouga
