Preparation

  1. Wash the Pak Choi and cut the green leaves off the cabbage. Then drain the cabbage on a tea towel. Cut the lower light part into bite-sized pieces, then salt the pak choi. The cabbage must soak for at least 15 minutes.

  2. Meanwhile prepare the kimchi paste in a bowl. First grate the carrot, apple and potato, then crush the garlic in a mortar. Cut the onion into large pieces and the chilli pepper into fine strips. Add sugar, fish sauce and Gochugaru.

  3. Chop the green Pak Choi leaves and mix them with the spice paste. Then mix the salted Pak Choi with the kimchi paste.

  4. Mix all ingredients carefully. Pour the kimchi into a jar and squeeze the air out. Place the kimchi in a dark and warm place for 24 to 48 hours. This will start the fermentation.

  5. Pak Choi Kimchi ferments quickly, so take a taste quickly and enjoy.
