Preparation

  1. Wash the leek onion / leek thoroughly with cold water.

  2. Now cut the whole skeins with the onion knife and put the cut strips in a water bath for 10 minutes. The water bath ensures that the sharpness is removed.

  3. Mix the sauce while waiting.

  4. After the 10 minutes, rinse the vegetables again and stir in the sauce. Add 1 teaspoon sesame oil to it and garnish with sesame seeds.

  5. Already Pajeori is ready to serve. Eat Pajeori for Korean BBQ or "Korean Fried Chicken".

    Pajeori or Korean Leek Salad is commonly used as a savory banchan for grilled and fried foods. The light taste creates an optimal balance between sharpness, sweetness and bitterness. Pajeori is especially eaten with Korean BBQ or fried chicken. Pajeori is usually prepared with leek onions, but this also succeeds with normal leeks. Following recipes from me are very fit for pajeori :)

    How to cut the leek easily

    For proper preparation of this garnish, the vegetables must be cut into thin long strips. This is usually cut in Korea with a special leek knife. For the taste, you should also cut Pajeori like this. With a standard knife, this result is also possible, but the preparation takes a longer time. The cheap 5-blade onion knife that you find in the utensils list can help.

    The cutting succeeds both with the special leek onion knife as well as with a normal knife. The preparation is only a lot easier with the leek onion knife :) Check out my linked video, where i show you how to cut the leek without the special knife.
