Kimchi Jjigae (김치 찌개) is one of the famous Korean soups that are especially healthy and delicious. In particular it is suitable for cold autumn and winter months and gives you warmth like as many vitamins and minerals. Kimchi, also known as South Korea's healthy power food, forms the basis of this soup. Kimchi takes on a sharp and slightly sour taste. With rice and other side dishes you can conjure up a grandiose dish with it.
Vegetarian or with meat, both possible
You can make your kimchi soup either vegetarian, vegan or with meat. Usually it is still refined with pork (pork neck, pork belly), with tuna or other seafood. But without meat it tastes just as delicious but with less calories.
The kimchi water is usually at the bottom of your box or kimchi wrap. If you do not have kimchi water, just take 20 to 30 grams more kimchi. Kimchi water provides an even stronger taste.
Make kimchi on your own or buy it?
Usually I don´t have enough home-made cabbage kimchi at home and sometimes I am just too lazy to prepare several kilos of kimchi at once, I often buy ready-made kimchi. This saves a lot of time! But if you still want to prepare the kimchi for the soup on your own, it's the best you follow our recipe.
