Hobak Bokkeum is a quick and easy korean sidedish. I cook it all the time and can finally show it to you. Some of you might know it already. In South Korea a Korean zucchini is used but in western supermarkets you have to use a different kind of zucchini, which isn’t a problem. This delicious Banchan is easy to prepare and is ready in about 10 minutes. As this side dish is saltier than other sides dishes, I recommend eating it with rice, kimchi and a delicious soup. 

How i can substitute Sae U Jeot?

Saeujeot are small fermented shrimps that are very salty. Only small amounts should be used, but they give dishes like this a fine fishy touch. As an alternative you can use sea salt. Try 1 tablespoon sea salt instead of 1 tablespoon shrimps.

Preparation

  1. Chop 100 gr zucchini into thin halves and add 0.5 tablespoon of salt. Mix the salt with the zucchini and leave it for 5 minutes.

  2. After 5 minutes pat the zucchini dry using a paper towel.

  3. Chop the garlic, saeujeot (or sea salt) and the spring onion finely.

  4. Heat the pan with 1 tablespoon sesame seed oil and add the zucchini.

  5. Fry for 1 minute on high temperature. Now add the other three ingredients and pan-fry on low heat for another 4 minutes.

  6. Serve the fried zucchini and garnish this quick side dish with sesame seeds.
