The preparation:

Start with the sauce: Combine the mirin, soy sauce and sugar in a small saucepan and bring to a boil.

Reduce the heat and simmer for about 10 minutes, or until the sauce has thickened.

Turn off the heat and let the sauce cool.

Now cut the chicken into cubes and the spring onions into about 2.5 cm (1 inch) rings.

Skewer the chicken cubes and spring onions alternately onto the wooden skewers (4 pieces of meat, 3 pieces of onions).

After you have skewered all the ingredients, marinate the skewers with the cooled sauce.

Now the Yakitori are ready to grill. If you prefer to bake them in the oven, bake them for 15-20 minutes at 180 degrees. Or use a handy table grill*.

If you like, you can brush the skewers with the sauce again before serving or just lightly salt them. Enjoy!

Yakitori is one of my favorite dishes! It tastes especially delicious with different sauces or simply with salt and pepper. I especially like that the skewers are so easy to prepare. If you also like grilled skewers, you should definitely try this variant with chicken and spring onions!
What exactly is Yakitori?
"Yakitori" is Japanese and literally translates to grilled chicken. Generally, all types of meat and vegetable skewers are called this in Japan. Traditionally, bamboo skewers are used, which are grilled over a very specific type of charcoal (called Binchotan).
How and where do you eat Yakitori?
In traditional Japanese pubs, Izakaya, you often find Yakitori on the menu, as they go perfectly with beer, sake or other alcoholic beverages. Because they are also practical to eat on the go, they are also offered at Yatais - Japanese street food stands.
What meat / vegetables are used for Yakitori?
Traditionally, chicken meat is used for Yakitori. In addition to breast, thigh and wings, offal such as heart and liver are also often used. Incidentally, some chicken breeds are particularly well suited for Yakitori. In Yakitori restaurants, chefs carefully select these breeds to grill the perfect Yakitori.

What spices are used for Yakitori?
As already mentioned, you can simply eat Yakitori with "Shio" (salt), or enjoy them with "Tare", a special Yakitori sauce. Its ingredients Soy sauce , Mirin, Sake and sugar give the Tare a very special sweet-salty taste, which goes perfectly with the skewers. You can also get creative with the sauce and mix it with ginger or other ingredients. Just try it out!
What skewers and charcoal are used?
Bamboo skewers are used for Yakitori in Japan. The so-called "Teppogushi" are round and pointed at the front and flat at the end so that they don't roll away when grilling. White charcoal, also called "Binchotan", is used for grilling. It is smokeless and glows particularly evenly and for a long time. Of course, normal charcoal will also do, or you can simply prepare your Yakitori in the oven.
