The preparation:

First, cut the vegetables and meat into thin strips. The thinner the ingredients, the faster you'll be done cooking. If you have a block of meat, freeze it for 30 minutes beforehand, then the meat can be cut into thin strips super easily.
I used white cabbage, onion, spring onion, garlic, shiitake mushrooms, carrots and pork for today's Yaki Udon :)
Further down I list what else you can use.
If you use dried shiitake mushrooms, soak them for 20 minutes beforehand. Fresh shiitake mushrooms can be used immediately after cutting and washing.

First, fry the meat with garlic, onion and a little oil over high heat for 1-2 minutes (the thinner the meat the less you need to fry it).

Add all the vegetables (except the spring onion) and continue to fry for another 2 minutes or so, stirring constantly over high heat.

Now wash the ITA SAN Udon noodles with warm water! I didn't cook them because they'll be cooked in the pan.

Now add about 100 ml of water (broth works too :) ) and the Udon noodles. Close the lid and let everything simmer for about 5 minutes. Stir occasionally.

Open the lid and let the excess water evaporate. Once this has completely evaporated, add 4-6 tbsp of Yakisoba sauce and fry the dish for about 3-4 minutes, stirring constantly. Make sure nothing burns..
Now add the chopped spring onion and stir everything together again.

You can serve it right away. Also add the Japanese pepper Sansyo to taste here. I think the Japanese "pepper" gives the dish an even more special taste and is perfect for this dish :) - Whether for lunch, dinner or even as a to-go meal, Yaki Udon is suitable for everything, hehe I think :)

Yaki Udon is commonly prepared with many different types of vegetables as well as pork. In this recipe, I have used the most common ingredients: cabbage, carrots, onions, and pork. Additionally, the following items are also suitable for Yaki Udon:
- Spinach
- Spring onions
- Zucchini
- Pumpkin
- Various meats (chicken, beef, pork)
- Different types of mushrooms (shiitake, enoki, oyster, mussel mushrooms,...)
For Yaki Udon, you can of course use any variety of Udon noodles. There are dry Udon noodles, which you naturally need to cook before using, then there are frozen Udon noodles, which also need to be cooked, though for a slightly shorter time, and then there are the ready-to-use Udon noodles, like the ones I use. I find that these "pre-cooked" noodles are easier to handle, and I require fewer pots and less electricity.

This is a really tough question, because I cook Japanese food a lot and with great pleasure... If I had to choose, I would make Yaki Udon or Yaki Soba. I love the Yaki Udon sauce <3. Second place for me would be Kare Raisu :).
I would use the miso soup first, for a delicious Japanese breakfast, now that the days are getting cooler :)
The recipe for Yaki Udon already sounds great, so I'd love to try it out. Eggs with miso (I saw it in a documentary and have wanted to try it for a long time). Curry bread (inspired by Black Butler—there really is an actual Japanese recipe for it). And of course Sakemaki and Kappamaki (maybe also Avocadomaki).

Japanese cuisine is a great enrichment for our kitchen. After we have already prepared Japanese dishes several times (teppanyaki with hot pot) and found them extremely delicious, we are always open to new things. This dish is heavenly :-) We refined it with coriander and replaced the pork with chicken. A real poem... surely thanks in part to the Yakisoba sauce. Thank you for the recipe
