The preparation:

  1. Prepare the onigiri & cook the rice according to these instructions. Since this recipe only describes the filling. The basic onigiri recipe explains all the important things about onigiri.

  2. The umeboshi onigiri actually requires hardly any preparation. Simply remove the pit and either leave it as it is or cut it into small pieces, whichever you prefer. I personally prefer it when the ume plum is still whole, of course without the pit.

  3. In this step, you must now carefully press the plum into the small hole that you made before.

  4. Then just take some rice and close the onigiri. Afterwards, the onigiri should be kneaded a little bit to stabilize the shape.
