The preparation:

  1. Bring the water to a boil with 1 tbsp rice vinegar

  2. Add the agar agar powder and stir well. Cook for 2 minutes.

  3. Now cool the mixture. I poured it into a square plastic container.

  4. Place the container in the refrigerator for 2 hours. This will set the Tokoroten.

  5. Now cut the set mass into cubes. Cut it inside the box. You may have to shake the box vigorously, so that the cubes fall out. 

  6. Mix the sauce: Simply mix 1 tbsp rice vinegar, 1 tbsp sugar and 1 tbsp soy sauce evenly in a separate bowl.

  7. Serve the Tokoroten and dip the cubes in the sauce or mix it directly with the Tokoroten.

    What is Tokoroten

    Tokoroten are usually thin noodles made from water and agar. Agar is a plant-based and vegetarian gelling agent derived from seaweed.  To make the noodles, you need a so-called Tokoroten-Tsuki.  With this utensil you press the cooled mixture (water + agar) through a press with a grid. Similar to a pasta press. But since I and many others do not own this device, I cut my agar agar mixture into small cubes. This makes them easier to eat :) 

    Is Tokoroten Healthy? 

    Tokoroten are very healthy, because the almost calorie-free snack is popular in Japan as a filling agent. As a snack (often chilled in summer) you can prepare it with different sauces and enjoy it. A perfect and very healthy little snack.

    Where can I buy the ingredients for Tokoroten?

    For Tokoroten you actually only need water, a little vinegar and agar agar. Fortunately, I have discovered a German product from Dr. Oetker, which is 100% agar agar. Simply order it via Amazon (see preparation list).

    What does Tokoroten taste like?

    Tokoroten actually doesn't taste like anything. The plant-based gelling agent is almost tasteless. Only the sauce is a carrier of the taste. Therefore, try different sauces.

    These sauces go well with Tokoroten

    I have often made the following sauces. But my favorite is and remains the simplest sauce:)

    My Favorite Recipe - Mild

    • 1 tbsp rice vinegar
    • 1 tbsp soy sauce
    • 1 tbsp sugar

    Kuromitsu Sauce - Sweet

    • 1 tbsp (heaped) brown sugar
    • 1 tbsp (level) white sugar
    • 2 tbsp water

    Kantō-Sauce - Spicy

    • 2 tbsp soy sauce
    • 2 tbsp rice vinegar
    • 1/4 spring onion (finely chopped)
    • 1 tsp mustard
