The preparation:

  1.  Combine all the ingredients in a small saucepan and whisk together.

  2. Bring the mixture to a boil over medium heat, stirring constantly, until the sugar is completely dissolved.

  3. Reduce the heat to low and simmer for 10-15 minutes.

  4. The sauce is ready when small bubbles form when you stir.

  5. Pour the sauce into a clean, preferably sterilized jar and let it cool without a lid.

  6. Shelf Life: The teriyaki sauce will thicken as it cools. You can use it immediately, or store any leftovers in the refrigerator for two to three weeks.

    Summary

Teriyaki Sauce is a beloved staple of Japanese cuisine, known for its sweet and salty flavor that enhances a variety of dishes, including meat, fish, and tofu. While pre-made teriyaki sauce is widely available in supermarkets, in Japan, it's often homemade, a practice that contributes to its superior taste. The term "teriyaki" itself refers to a cooking method that combines the meanings of "glazing" and "grilling." Ready-made sauces tend to be thicker with ingredients like honey and cornstarch, while traditional Japanese sauce is more fluid and typically free from these additives. To prepare your own teriyaki sauce, essential ingredients include soy sauce, sake, rice vinegar, and sugar, with optional additions like ginger and garlic to cater to personal preferences. Cooking in "teriyaki style" means using this flavorful blend of seasonings to achieve the distinct glossy finish that characterizes teriyaki dishes. For those looking to explore this sauce further, instructions and recipes are readily available.

The sweet and savory teriyaki sauce is a classic in Japanese cuisine, known worldwide and versatile in use. It pairs great with meat and fish dishes, but also tastes very good with tofu. While you can buy the sauce in our supermarkets, it is usually homemade in Japan. It's very easy to make, and we'll tell you how!

    What does Teriyaki actually mean?

Teriyaki is a specific seasoning and cooking method, composed of the words “Teri” - glossy, and “yaki” - grilled. So, you can refer to any grilled or fried dish that is glossy as “Teriyaki”.

Where can I buy ready-made Teriyaki sauce?

In Germany, teriyaki sauce is now available in bottles at every major supermarket. You can definitely also find it in Asian stores. If you are in Japan, you will have to search the supermarket for teriyaki sauce for a long time, as it is rarely available and only as imported sauce. Because the Japanese know that homemade simply tastes best :p

What does “cooked in Teriyaki style” mean?

Sometimes you read on menus, for example, “Chicken Wings - Teriyaki Style”. This simply means that they are seasoned with soy sauce, sake, mirin (rice vinegar), and sometimes sugar. The nice gloss comes from the mirin used, which should definitely not be omitted. With the other ingredients, you can be creative and experiment. The sauce also tastes delicious when refined with honey, orange juice, garlic, or ginger.

What do I need to prepare Teriyaki sauce?

The basic ingredients for teriyaki sauce are soy sauce, sake, rice vinegar, and sugar. In Western cuisine, ginger and garlic are often added. Just try out which variation tastes best to you.

What other differences are there between bottled teriyaki sauce and Japanese teriyaki sauce?

Japanese teriyaki sauce is much thinner than the Western bottled version. In Japan, the sauce is also not thickened with honey or cornstarch, as is common in the Western world.
