The preparation:

Vigorously mix together flour, egg, dashi, and soy sauce until a smooth batter forms and no lumps are visible.

Finely chop the spring onions and octopus. The octopus can be chopped to your liking.

Heat the takoyaki pan on a gas burner, table gas burner, or camping stove. Thoroughly grease it with oil and wait briefly.

When the oil is hot enough, shake the batter into the pan molds until the hemispheres are 3/4 full, as the octopus, tenkasu, and spring onions will be added to the liquid batter next.

After 3 minutes, flip the takoyaki. This requires a lot of skill and especially practice. Try it out for yourself.

When the takoyaki balls are crispy and brown, remove them from the pan and garnish them with mayo, takoyaki sauce, and bonito flakes (katsuobushi).
