The preparation:

  1. First, bring the water to a boil with the gelling agent agar agar. Once it boils, reduce the heat to low.

  2. Now stir in the sugar until it is smooth and let it simmer over low heat for another 2 minutes.

  3. Once the sugar has completely dissolved, remove the pot from the heat and let the mixture cool for about 2 minutes.

  4. Now comes the actual beautification part: Pour the liquid into a suitable and beautiful mold made of silicone, plastic or glass. Then place the halved strawberries in the liquid and place the molds in the refrigerator.

  5. The jelly just needs to cool in the refrigerator for one to two hours. To serve, simply shake the jelly out of the molds onto a plate.

    Natural Jelly

    Kanten is a Japanese dessert made with gelatin. The vegetable product agar agar is used as a gelling agent. Unlike in Germany, gelatin in Japan is made from red algae instead of pigs. With other ingredients, the kanten is then sweetened, refined and beautifully decorated. Light colors are particularly beautiful, shining through the transparent jelly piece. You can make kanten with either milk or water, I prefer the water variant because it is particularly low in calories.

    Agar Agar is the Japanese gelling agent

    Agar agar is a vegetable gelling agent that is not widely used in Germany so far because it is more expensive than the gelatin common in Germany. In Germany, the usual gelling agent, gelatin, is made from pigskin. It is cheap but not vegetarian. 

    The good thing is that I found a German brand that offers agar agar as a cheap product in the supermarket. Dr. Oetker is currently the only known brand among the suppliers in German supermarkets. You can buy this package on Amazon, but also in normal supermarkets (Edeka, Real, Rewe). This product contains agar agar as the main ingredient. Therefore, it is also ideal for this Japanese dessert.

    Kanten is usually served cold. This makes Kanten the No. 1 refreshing dessert in Japan and is especially popular on summer days. The beautiful bright and fruity colors make children especially crazy about Kanten.

    The Strawberry Kanten

    Kanten can be prepared with almost any fruit. I especially love kanten with strawberries, as the red and sweet fruits remain tangy and fresh in the jelly mass. A very beautiful color play is provided by kanten based on milk with the red fruits. It just invites you to devour it!

    The number of kanten ultimately depends on the choice of mold. If you use a large mold, you get large, but fewer kanten. I recommend you choose small molds, as the jelly pieces will then fit perfectly in your mouth. Of course, you also have to cut the strawberries to the appropriate size.
