Summary
Miso Kyuri is a simple yet delicious Japanese side dish made with just two ingredients: miso paste and fresh cucumbers. For the best flavor, it's recommended to use Moro miso, although regular miso can also be substituted. The quality of the cucumbers is crucial, with firm, fresh options preferred; Japanese cucumbers are often superior in quality. A useful tip for preparation is to soak the cucumbers in ice water beforehand for added crunch, and decorative cutting can enhance presentation. Miso itself offers a delightful blend of sweet, salty, and nutty flavors. Miso Kyuri is enjoyed by spreading a small amount of miso on cucumber slices and pairs perfectly as a light appetizer or side dish, making it a versatile addition to any meal. This is one of the simplest side dishes in Japanese cuisine – and you only need two ingredients for it: Miso paste and fresh cucumbers. Ideally, you use Moro miso . But if you can't find any, you can also use normal miso .
Therefore, it is all the more important to use high-quality ingredients. Make sure to use only firm, fresh cucumbers. Japanese cucumbers always have excellent quality. In Germany, you need to make sure that the cucumbers are not too soft.

Hello, what's the garnish in the picture above next to the cucumbers? Seasoned wheat? Best, Arne
Hello Arne, The thing next to the cucumber is called Moro Miso. Best regards Ryusei
In Japan, I often ate Miso Kyuri. It was available in almost every restaurant. The Moromi Miso paste needed for it could be found in any supermarket. Back in Germany, it seems impossible to get Moromi Miso. Even at the Japanese gourmet store, I only get a shrug when I show them the lid from the original Japanese packaging. On Amazon & Co., only the usual miso pastes end up in my cart. And here in the recipe, it just says to use Moromi Miso. But I can’t find anywhere here how to get this specialty. Is there a recipe for Moromi Miso? Or a link to a Moromi Miso dealer?
Hello Karsten! I just looked it up and yes unfortunately Amazon does not sell it either. I don't have a recipe for this, sorry. Best, Ryusei
