The preparation:

  1. Bring the milk, sugar and agar agar to a slow boil in a saucepan.

  2. Remove from the heat.

  3. Allow the milk to cool (10 minutes).

  4. Pour the milk into a suitable container that you want to use for storage.

  5. Place the mandarin pieces into the mixture and allow to set in the fridge for 30 minutes.

    Kanten with milk is a very popular Japanese dessert. It is especially popular with children because of its sweet taste. It can be prepared with regular milk, but also almond/rice/lactose-free or soy milk. 

    Try out the different milk variations and find your own Kanten favorite. Besides sweet mandarins, I recommend the variations with canned peaches, strawberries or other small sweet fruits.

    Agar Agar is the Japanese gelling agent

    Agar Agar is a plant-based gelling agent that has so far been used very little in Germany because it is more expensive than the gelatine commonly used in Germany. In Germany, the usual gelling agent, gelatine, is made from pigskin. It is cheap but not vegetarian. 

    The good thing is that I found a German brand that offers Agar Agar as an inexpensive product in supermarkets. Dr. Oetker is currently the only known brand offering it in German supermarkets. You can buy this pack on Amazon, but also in normal supermarkets (Edeka, Real, Rewe). This product contains Agar Agar as its main ingredient. Therefore, it is also ideal for this Japanese dessert.

      Also bei mir hätte ein Viertel der Agar Agar gereicht. Habe einen Teelöffel dazu gegeben und es war viel zu fest. Habe allerdings ein Agar Agar in Bio-Qualität verwendet, vielleicht liegt da der Unterschied

        Ich nehme an, dass es eventuell eher mit der Marke zusammenhängen könnte. Generell hat das Rezept eine eher feste Konsistenz, aber das hängt natürlich auch mit dem eigenen Geschmack zusammen. Danke auf jeden Fall für den Kommentar. Liebe Grüße Ryusei
