The preparation:

Fill a pot with water and bring it to a boil.

Meanwhile, you can slice the spring onions into small rings and the kamaboko (fish cake) into small slices.

Cook the udon noodles as described on the package, this should be quite quick.

If you don't want to make your own dashi (here is a recipe for it), you can use the instant version and prepare it now.

Rinse the cooked udon noodles with cold water and put them in a soup bowl.

Pour the prepared dashi over them.

Now it's time for the toppings. Add 2 slices of aburaage (fried tofu) and some kamaboko.

Garnish everything with the sliced spring onions and season it with shichimi togarashi. Enjoy!

How did Kitsune Udon come about?
“Kitsune” translates to fox and “Udon” are noodles. But what are fox noodles? It is said that the name comes from the fact that Aburaage is the favorite food of foxes in old Japanese fairy tales. Another theory says that the golden brown color of the tofu looks like a fox's fur.
Where can I buy Aburaage, fish cakes, Udon and Dashi?
These somewhat exotic ingredients can already be found ready-made in many Asian supermarkets. If you don't have one near you, you can also order the ingredients online, for example from Amazon. Kitsune Udon for Vegetarians
Although it might not look like it at first glance, Kitsune Udon can very easily be converted into a vegetarian or even vegan version. You can make the dashi broth yourself and leave out the bonito flakes and also leave out the fish cakes.
