The preparation:

  1. Peel the carrots and if the shiitake mushrooms are dried, soak them in a lukewarm water bath for 10 minutes.

  2. Then dice both very finely.

  3. Fry the carrot and shiitake pieces in a pan with a little oil for 2 minutes.

  4. Add rice vinegar and sugar to the pan and simmer for 5 minutes with the lid closed.

  5. Put the rice in a bowl and mix with the contents of the pan.

  6. Carefully open the pouches from the bottom and fill with the rice.

    Summary

Inari Sushi is a delightful dish consisting of fried tofu pouches filled with traditional sushi rice and vegetables. These pouches, known as Abura-Age, are typically seasoned and can be prepared in advance, making them perfect for meals on the go, as they do not spoil easily like dishes containing meat or fish. They can be filled with various ingredients, including hijiki, shiitake mushrooms, or diced carrots, though it's important to note that Inari Sushi is not gluten-free. This versatile meal pairs wonderfully with soups such as Miso Shiro, Tamago, and Wakame, and is ideal for enjoying as a convenient bentō at work, school, or during leisurely walks in the park.
Inari Sushi are filled fried tofu pockets with regular sushi rice and vegetables. These pockets are usually seasoned, while the original yellow/beige looking Abura-Age (fried tofu) is unseasoned and is added to recipes such as Miso Shiro[/link] (Miso soup). The Abura-Age is eventually formed into the pockets and seasoned. These can be filled with normal sushi rice or, depending on your preference, also ingredients like Hijiki (algae), Shitake mushrooms or diced carrots in the rice. However, with this recipe, you have to make sure that the Inari Sushi is not gluten-free.

The practical thing about Inari Sushi is that you can perfectly prepare them as a meal in the evening before you leave the house. You don't have to worry about the sushi going bad, as no meat, fish or other ingredients that are easily perishable are used. In the end, you can perfectly take the prepared Inari Sushis as a Bento to work, to school or even when walking in the park, as they can be eaten cold and easily with your hands.

Inari Sushi also goes perfectly with soups. I recommend: Miso Shiro[/link] , Tamago Soupu (Egg Soup), Wakame Soupu (Seaweed Soup with Sesame).

How and for how long can the sushi pockets be stored once the package has been opened? I cooked Kitsune Udon yesterday and now I have half the package left.

Hello Dirk, you should eat these relatively soon after opening, so don't store them for 4 days after opening. The packets are already packed in small quantities anyway, so they won't last long anyway due to the hunger of others :) Best regards, Ryu and Matthias

Hallo, do you have a tip for how we can easily open the tofu pouches for filling? Best regards, Ariana

Hallo Ariana, if the Tofutaschen tear open, you can gently help with a knife if needed. Best regards, Ryusei
