However, there are a few things to keep in mind to ensure this recipe retains its typical flavor. The right choice of tofu is crucial, as not all tofu can be enjoyed raw. If you choose the wrong type of tofu, this dish can easily taste like rubber. Therefore, silken tofu must be used for this dish. Silken tofu has almost no taste of its own and can be eaten without noticeable aftertaste. Hard and soft tofu, for example, are not suitable for raw consumption as they have a strong taste of their own. These types are preferably roasted, cooked or fried.
Silken tofu, on the other hand, is so soft that a sharp knife simply glides through it. Moreover, the tofu disintegrates on your tongue and is hardly noticeable.
You can buy silken tofu at your local Asian supermarket. But make sure you buy silken (also silken) tofu. Otherwise this dish will not taste good.
