Fried rice tastes just as delicious as it is simple – if you mix too many ingredients together, then on the one hand the individual components hardly come into their own. And on the other hand, they stick together much more easily – the result is then more like solid mush than crispy fried rice! 

    Use a large pan

    The rice must be able to come into contact with the pan on all sides. Therefore, use a sufficiently large, non-stick pan or – even better – a wok.

      Nicht mein erster gebratener Reis, aber der erste japanische. Ich habe ihn mit Hühnerbrust, Ei, Paprika, Erbsen und Frühlingszwiebeln gemacht, klassische Resteverwertung eben. Er ist gleich gut gelungen. Das Dashi gibt ihm einen interessanten Geschmack, der ihn deutlich von anderen Varianten von gebratenem Reis unterscheidet.

        Hallo Dirk, freut mich, dass es dir zum ersten Mal gelungen ist. Dashi hat in der japanischen Essen eine besondere Bedeutung und wird sehr oft verwendet. Genau den interessanten Geschmack den du beschreibst, soll Dashi erzeugen. Die Japaner nennen ihn "Umami". MfG Ryusei von RyuKoch
