Two fresh oysters on the half shell sit side by side on a bed of coarse salt spread across a dark surface. Each oyster is garnished with a small lemon wedge and thin green sprouts, and a green leaf peeks out beneath the shells. Beside them rests a small Japanese bowl with a blue floral pattern, filled with amber ponzu sauce and topped with the same delicate greens. The dark background and scattered salt give the dish a clean, dramatic presentation.

Die Zubereitung:

    Austern frisch

Two whole oysters, still in their rough, craggy shells, sit on a folded sheet of newspaper on a light wooden surface. The shells are dark gray and beige with jagged, uneven edges, and one overlaps the other. The newspaper beneath them is printed with Japanese text and small photos, including a portrait and what looks like sports coverage, and it is spread out to catch the drips from the shellfish. It reads as the first step of preparing fresh oysters at home.

    Austern frisch
